RedBrick Pizza opened March 4 next to Subway in a small shopping center on Sixth Street, across from Dave's Place. The casual restaurant offers salads, pizzas small enough for one or large enough for a family, fhazani sandwiches, gelato and a wide selection of soft drinks, beer and wine to wash it all down.

Patrons order their food and pay for it at the counter, and servers deliver it to the tables after it is freshly fire-roasted in the restaurant's unique stone oven that uses the restaurant's namesake, a terra cotta stone, or red brick, to quickly sear it.
Three big-screen TVs are continuously tuned in to CNN, ESPN and the Food Network, and smaller TVs installed in booths around the restaurant can be controlled by those sitting in the booth.

Seating for as many as 58 people is available in booths, at tables or even around a working fireplace, and the restaurant currently employs 20 people.

Eat Inc. brought the franchise to Caroline County after Howard Johnson, director of operations for Eat Inc., visited one of the chain's California locations and immediately recognized the restaurant's wide demographic appeal.

"In one booth there was a family of four watching SpongeBob SquarePants, and in the next was a businessman working on his laptop, drinking a beer, while watching ESPN," Johnson said. "I knew it would work here."

Eat Inc., is now the master developer for RedBrick Pizza in the Maryland and Delaware area, and is looking for a franchisee to open one in Easton. In the meantime, Eat Inc., already has plans to open one in Centreville in July and another in Chestertown.

A sales seminar about purchasing franchises will be held May 2 at the BWI Airport Marriott.

Johnson said the pizza restaurant already is seeing regular customers after only a week in business, as are the two other restaurants Eat Inc., has opened in Ridgely in the past several months, Subway and Batter Up.

"We took a chance in Ridgely and it really worked," Johnson said. "The customers are just fantastic. We have very strong community support, and we're very thankful for it."

The restaurant is also available for fundraisers for schools and community organizations. Ten percent of sales on a designated fundraising night will be donated to the specified organization.

The pizza chain focuses on being environmentally-friendly and health-conscious, Johnson said.

Cups, plates and utensils are all biodegradable, tabletops are made of recycled lumber and the paint on the walls is made with nontoxic chemicals.

The food is made without trans fats and with heart-healthy olive oil, and the pizza has about half the fat of comparable pizzas, Johnson said.

"The image is fast, casual food in a comfortable, warm atmosphere," Johnson said. "The menu is simple and the prices aren't over the top."

RedBrick Pizza is open from 11 a.m. to 9 p.m. Sunday through Thursday and from 11 a.m. to 10 p.m. Friday and Saturday.
